Domaines Christophe Guillo (Bout du Monde/Meix)
Freshness reigns supreme at this Chablis domaine
Originally, the Domaine des Meix was the sole owner of vineyards on the "Murgers" plateau in Saint-Aubin. In the early 1960s, the domaine planted Pinot Noir on their plot of Saint-Aubin 1er Cru Murger des Dents de Chien in order to increase their wine sales. Today, the domaine still grows Pinot Noir in this area of fine white wines. Christophe Guillo, who took over the domaine at the start of the '90s, developed his production in Saint-Aubin and incorporated the Domaine du Bout du Monde into the historic family estate, which allowed him to add a large number of new appellations to his range, including Saint Romain, Beaune and Bourgogne Hautes Côte de Beaune.
Christophe Guillot vinifies the wine according to the demands of the vintage. Due to a longer ageing and the absence of fining and filtration, the wines undergo less handling which preserves their aromatic potential and the expression of these very special terroirs.
